About Alaska Pollock
Alaska pollock is a schooling member of the cod family, caught by midwater trawl in the Bering Sea and Gulf of Alaska. It has white, lean flesh with a mild flavour and a delicate, flaky texture.
The fishery is managed by NOAA Fisheries under annual catch limits and is processed both at sea and in shore plants. Fillet blocks supply breaded and battered products, while surimi and roe (mentaiko, tarako) serve Japanese and Korean markets.
