Overview
About Atlantic Salmon
Atlantic salmon (Salmo salar) is farmed in sea pens in cold coastal waters, mainly in Norway, Chile, the United Kingdom and the Faroe Islands. The flesh is orange to pink, with a rich, mild flavour and a firm, moist texture owing to its relatively high fat content.
Norway is the global leader, followed by Chile, which ships fresh fillets to the Americas and frozen product to Asia. Scottish salmon holds PGI status and in 1992 became the first fish and first product from outside France to receive Label Rouge. Uses include sashimi, smoking, grilling, baking and ready meals.
