Overview
About Langoustines
Langoustines live in burrows on soft muddy seabeds in the northeast Atlantic and North Sea and are caught by trawl or by creels (pots). The tail meat is white, sweet and delicate, and quality depends on careful handling from catch.
The UK, led by Scotland, is the largest producer, with Fraserburgh a key landing port and creel fisheries on the west coast. Whole langoustines are sold to southern European and premium foodservice markets, while tails are used for scampi and processing.

Key points
- Scotland is the main source
- Live, whole or tails
- Graded in pieces per kg
- Creel caught for live trade
