Overview
About Rainbow Trout
Rainbow trout (Oncorhynchus mykiss) is hatched in fresh water and grown out in marine net pens in southern Chile, where it reaches a much larger size than freshwater trout. The flesh is deep orange red with a mild, clean flavour and a fine, firm texture.
Chile is one of the leading producers of sea farmed trout, with Japan and the United States among its most important markets. Japanese buyers favour silvery whole fish of around 2.8 to 3 kg for sushi, grilling and salted products, while fillets are supplied for smoking and food service.
